About the Recipe
Lately, I’m a big salad girl and so I am always looking to change things up with my salads and try new flavors. My latest obsession is arugula. As a bitter, arugula is great to add to salads at the start of a meal to stimulate digestive secretions and prepare your digestive system for food. When you consume a bitter, secretions from your pancreas, liver and small intestine are stimulated and your appetite is stimulated as well. Starting your meal with a bitter, thus prepares your body to receive food and sets the gut up for optimal digestion.
Luckily, there are so many yummy combinations and flavors that pair well with arugula and this is just my most recent recommendation. Additionally, I’ve found that making a refreshing salad has helped cut through the heat of summer. Especially when the last thing I want to do is turn on the stove or oven (talk about a hot mess). Ingredients
Salad:
Arugula (as desired)
Half a red onion
2 small cucumbers
1 cup cherry tomatoes
1 bunch of chives
1 bunch of dill
1 can of chickpeas
1 avocado
Dressing:
⅛ cup Apple cider vinegar
1-2 limes
⅛ cup Olive oil
1 tsp Cumin
1 tsp Sumac
Salt + pepper to taste
Tofu:
Block of firm tofu pressed
Marinate:
2 tbsp Tamari
1 tbsp Sesame oil
1 tsp Turmeric
1 tsp Cumin
2 tbsp Nutritional yeast
1 tsp Garlic powder
¼ tsp Maple syrup
Cayenne pepper to taste
Preparation
Chop tofu into squares
Create sauce for tofu by mixing all marinade ingredients. Add to tofu. Ket sit in the fridge for 10 mins.
Add tofu to the air fryer for 10 minutes until crispy.
Chop red onion, tomatoes, cucumber, chives, avocado and dill. Add arugula to a large bowl and add chopped vegetables on top.
Wash and strain chickpeas then add to the large bowl.
In a small bowl, add dressing ingredients. Drizzle dressing over salad.
Add tofu from the air fryer and enjoy!
